Christmas tree is down - the holiday season is officially over. Kinda makes me sad as I adore the holidays - especially Christmas. I was bummed out as I was packing the Radko's away for another year :( boooo! Ah well...onward and upward....
In other news - I am back on my Weight Watchers regimen. Today is the first day I have had fruit, vegetables, no booze or junk in I can't remember when. I felt 100% better today just eating cleaner foods. I can't wait to get through a few weeks and start to see a difference. I have really packed on some extra lbs over the past few months....time to settle down and get back to my healthy habits.
So, one of the biggest things I have learned on my WW journey is to plan ahead. It makes it so much easier to stay on track. So today I went grocery shopping for healthy foods, cleaned out a bunch of our crap in the fridge & cooked some healthy stuff for this week.
Here is my salad I had for dinner....
Fresh veggies!!! Shocking I know, right? I think my body was like "WTF is this green crunchy leafy stuff??" I had to laugh as I was eating it....I truly can't remember the last time I had a salad as a meal....a healthy one that is! I had to text a pic of it to my sister Stacy as she looooves salads. She asked me to post the recipe or - how I assembled it basically so....here ya go woman!
Rosemary & Garlic Grilled Chicken Salad w/ Apple & Feta --
I marinated three small chicken breast in a little olive oil, fresh garlic, fresh chopped rosemary, black pepper & sea salt - then grilled it on my GFG and chopped it up. I divided it up so my portion had 4oz.
Take 2 cups of romaine lettuce chopped, put chicken on top, add 1/2 a diced fuji apple, 1 tbsp oven roasted sliced almonds, 1/2 oz of feta cheese crumbles and top that with 2 tbsp of Ken's light balsamic vinaigrette. Pretty quick & simple and was 9 WW+ points.
I also made some Egg Muffins for quick breakfasts this week - just grab one and go...
I used one eggland's best egg (would have used 2 but I there was only 1 left) and mixed that with 6 oz of egg-whites & a pinch of italian seasoning. After spraying each muffin tin with a little Pam, I then put in each muffin tin I put a little each of diced red pepper, chopped spinach & a reduced fat italian cheese blend - and topped each muffin tin evenly with the egg mixture. Baked at 375 for about 30 mins. I used a silicone muffin tin tonight and damn these popped right out beautifully - no sticking. I am totally going silicone baking pans from here on out. These are 2 WW+ points each.
Also made a batch of Veggie Soup to add to my lunches for 0 points - just followed the normal WW recipe but added some lemongrass, ginger & sriracha as I had all that on hand and I like my soup with a little kick....don't judge it by this pic...it really is yummy :)
So with all this pre-cooking/pre-planning hope it makes this week a bit easier to navigate & stay on track. Wish me luck :)
Other than that....I am so happy with this little jewelry holder i bought for $13! I have been wanting one for some time and almost didn't buy this one due to the little birds but.... they have grown on me and I now find them quite charming actually!
In fact, the little birds make me so happy I wanted more of them in my bathroom...I found these Audrey Organic bath towels online at pottery barn and fell in love instantly but of course.....sold out :( dammit!!
Definitely a different style for me as I usually like a more modern & masculine style but - these are beautiful. I am still cursing myself that i didn't find them earlier.
Anyway - that's all I have for today - back to reality tomorrow as I return to work and 2012 the grind officially starts all over. Hope we all have fantastic weeks! Later taters.

Good Luck this week!! I know you will do great! I am hitting up the grocery store tomorrow, I am ready to get back on track too. I might need to make that salad!! Looks delicious.
